The simplest preparation is new potatoes, some quantity of water, and 2 - 10 minutes of cooking. They can be mashed or eaten whole.
- Melanie Cooks Instant Pot Small Potatoes - The basics. I'm dubious of the 2m cook time; I usually use 8-10m, but this should be experimentally verified.
- The Recipe Rebel Garlic Instant Potatoes - Some fusion of this and the above will generate the canonical recipe I think.
Another option is roasting the potatoes somehow in oil. I have yet to attempt this magic.
